Cheesy Rice Bake with Broccoli

  • 1 Cup uncooked long grain white rice
  • 2 Cups water
  • ½ Large sweet onion
  • 1 Tablespoon butter
  • 1 10¾ oz. Condensed cream of celery soup
  • ⅔ Cup milk
  • 16 oz. Processed cheese
  • 2 Cups frozen broccoli
  • ¼ teaspoon black pepper
  • 1 Cup packaged french fried onions
  1. Cook rice and water as per package directions
  2. Cook broccoli as per package directions
  3. Meanwhile chop onion and cut cheese into a large dice
  4. In a 10-12 inch skillet, melt butter on medium heat and add onion stirring occasionally until tender
  5. Add soup and gradually stir in milk
  6. When incorporated, add cheese and cook until cheese is melted
  7. Stir in cooked rice and broccoli
  8. Place in a sprayed 9X13 pan
  9. Bake uncovered 30 minutes at 350 degrees
  10. Top with french fried onions and place back in oven for 5 more minutes
If you make this ahead of time, cover dish and keep in refrigerator until ready to bake.
