This bacon and egg salad is just a simple twist on egg salad whether you eat your egg salad as a sandwich, on top of a quartered tomato, on crackers or mixed into a chopped lettuce salad. I usually boil a dozen eggs at a time and keep them in the refrigerator in an egg carton on which I have marked “hard boiled” on the outside. Some mornings we will have have them for breakfast. They are also great as a high protein snack and many times I grab a few and make egg salad for lunch. As much as I love bacon, I do not like the smell of bacon that lingers in the house after cooking it. I even tried cooking the bacon in the oven but that did not alleviate the problem. So now, I buy the large packages of precooked bacon from Costco (Which I’m thinking should also be available at other membership type food stores.) which stays just fine in the refrigerator for weeks. Smaller packages are available at regular grocery stores but the cost per slice is much higher. Those slices can be used a few at a time and they take less than a minute in the microwave.
So, the last time I was making some egg salad for lunch, I saw the package of bacon and thought why not? Adding the bacon to the egg salad was really good so I thought I would share it with you today. I know it’s simple, but I had never thought of it before and maybe you haven’t either.
My plan was to really share Salt and Vinegar Wings. This past winter while in Arizona, one of the major food chains started selling cooked chicken wings, offering 6-8 varieties at a time, set up like a salad or olive bar. It was near lunch time and loving wings, I bought a few of each variety and Bill and I had a taste test. I had never had (nor had known about) salt and vinegar wings. Well, I was hooked. Of course, now that I am back in Wisconsin, they are not offered here so I have been on a quest to test different recipes to find one that is simple, not time consuming and tastes great. I have tried and worked with different recipes and techniques and last night I came close to what I am looking for. So, I am hoping to tweak it just a bit more and post the recipe in the next week or two. So, until then, enjoy this simple “recipe”.
- 4 hard boiled eggs
- 1 green onion
- 4 slices precooked bacon (packaged or leftovers)
- 2 teaspoons deli mustard
- 4 Tablespoons mayonnaise
- Salt and pepper to taste
- Peel and dice hard boiled eggs using an egg slicer (after the first slice, pick the egg up and turn it sideways and put it back on the slicer to cut through a second time for a dice)
- Place the diced eggs in a bowl
- Cook the bacon in the microwave as per package directions
- Chop the bacon into small pieces and add to the eggs
- Thinly slice the green onion and add to the bacon and eggs
- Add the mustard, mayonnaise, salt and pepper and stir until combined
